- One cup yellow cornmeal
- One cup all purpose flour
- One-quarter cup sugar
- One tablespoon baking powder
- One-half teaspoon salt
- One cup milk
- One large egg
- One quarter cup vegetable oil or bacon grease
Preheat the oven to 425 degrees Fahrenheit. Fry the bacon in a heavy cast iron skillet until crispy. Remove and crumble. Keep the skillet of grease on low heat while you mix up the batter.
Combine the cornmeal, flour, sugar, baking powder and salt in a large mixing bowl. In a separate bowl,combine the milk and egg. Add the milk-egg mixture, the crumbled bacon, and the oil or bacon grease (warm from the skillet) to the dry ingredients. Stir until the batter is smooth.
Pour the batter into the warm skillet, then place it in the oven. Bake for 20 to 25 minutes. The edges of the bacon bit cornbread should begin to brown when the it's done.
